The best buttermilk pancakes ever. I used the perf

The best buttermilk pancakes ever. I used the perfect recipe from the @nytimes with some tweaks:
🥞 add 1 tsp of vanilla
🥞 cook on medium (make sure skillet is hot enough) for 1 min instead of medium low for 2-4 min. Gordon Ramsay rules here - if it’s not hot enough, you’ll get undercooked pancakes that fall apart.
🥞 use the warm feature on the oven instead of setting it at 325 degrees…if you don’t have a warm feature on your oven, use 125-140 degrees.
🥞 let the batter sit out for 30 minutes before cooking (for fluffier pancakes)
🥞 how you pour the batter onto the skillet matters! To get the perfect flip, pour some of the batter for your top layer and the rest on top…slowly.
🥞 don’t use 1 TBSP oil like the recipe says, your batter will spread. Use a spray can of oil instead.
🥞 don’t forget to weigh your flour instead of using a measuring cup. 2 cups of flour is about 250g on a kitchen scale.
🥞 use a nonstick pan/skillet, don’t try even try a cast iron skillet — it doesn’t work
🥞 I recommend cooking one pancake at a time and using the oven to keep pancakes warm as you build stacks (like the recipe says to)
🥞 Sorry, it’s not the same if you don’t use buttermilk (no subs, please!)
